Ginger cookies

10 oz. (2-1/4 cups) unbleached all-purpose flour 
2-3/4 tsp. ground ginger 
1 tsp. baking soda 
1/4 tsp. table salt 
6 oz. (3/4 cup) unsalted butter, at room temperature 
1-1/3 cups granulated sugar 
1 large egg, at room temperature 
1/4 cup molasses 
3 Tbs. finely chopped crystallized ginger 

Roll into 1" ball, roll in sugar, set 2" apart on baking sheet

Bake at 350F 12 min

Makes 2 dozen
